METHOD
Step 1.
Preheat your oven to 200°C (392°F).Step 2.
Slice the aubergines in half lengthwise. Score the flesh in a diamond pattern, being careful not to cut through the skin.Step 3.
Brush the aubergine halves with olive oil, and season with salt and pepper. Place on a baking tray, cut side up.Step 4.
Roast in the oven for 35-40 minutes or until the aubergine is soft and golden brown.Step 5.
In a small bowl, mix the crème fraîche with lemon zest, and a pinch of salt and pepper.Step 6.
Once the aubergines are roasted, allow them to cool slightly.Step 7.
Spoon the crème fraîche mixture over the aubergines.Step 8.
Garnish with chopped mint and basil leaves.Step 9.
Serve immediately as a delightful vegetarian entrée or a side dish.
