Slow Cooked Beef Brisket with Potatoes & Carrots Recipe

A wholesome and hearty meal, perfect for a comforting family dinner. The beef brisket is tender and juicy, slow cooked with thyme, rosemary, potatoes and carrots. Add a fresh salad and some crusty bread for a complete meal.

METHOD

  • Step 1.

    Preheat your slow cooker to low setting.
  • Step 2.

    First season the beef brisket with salt and pepper.
  • Step 3.

    Now brown the meat. Seer the beef join in a hot pan with a little oil until brown and a little crispy all over, 4-5 minutes on each side.
  • Step 4.

    Peel and half two onions and place them cut side down in the slow cooker. Then place the beef join on top of the onions to stop it sticking to the bottom.
  • Step 5.

    Wash the potatoes and peel the carrots, and cut them into chunks. Add them to the slow cooker.
  • Step 6.

    Pour in the red wine and beef stock and add a few sprigs of thyme and rosemary.
  • Step 7.

    Place the lid on the slow cooker and cook on low for at least 8 hours, until the beef is tender and pulls apart easily.
  • Step 8.

    Serve the beef brisket with the vegetables, spooning over some of the juices from the slow cooker. Enjoy!

  3. 6 Potatoes

  4. 4 Carrots

  5. 2 tbspFresh thyme

  6. 2 tbspFresh rosemary

  7. 2 Onions

  8. 50 mlRed wine

  9. 50 mlBeef stock
