METHOD
Step 1.
Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.Step 2.
While the pasta is cooking, prepare the pesto. In a food processor, combine the basil leaves, pine nuts, garlic, grated Parmesan cheese, lemon juice, and a pinch of salt. Pulse until finely chopped.Step 3.
With the food processor running, slowly drizzle in the olive oil until the pesto is smooth and well combined. If needed, add a bit of pasta water to adjust the consistency.Step 4.
Taste and adjust the seasoning with more salt if desired.Step 5.
