
Simple Pesto Spaghetti Recipe

METHOD
- Step 1.Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
- Step 2.While the pasta is cooking, prepare the pesto. In a food processor, combine the basil leaves, pine nuts, garlic, grated Parmesan cheese, lemon juice, and a pinch of salt. Pulse until finely chopped.
- Step 3.With the food processor running, slowly drizzle in the olive oil until the pesto is smooth and well combined. If needed, add a bit of pasta water to adjust the consistency.
- Step 4.Taste and adjust the seasoning with more salt if desired.
- Step 5.In a large mixing bowl, toss the cooked and drained spaghetti with the prepared pesto until evenly coated. If needed, add a splash of pasta water to help the sauce adhere to the pasta.
- Step 6.Serve the pesto spaghetti in individual bowls. Garnish with extra grated Parmesan cheese and fresh basil leaves.
