METHOD
Step 1.
Begin by preparing the red onion chimichurri. In a small bowl, mix together chopped red onion, olive oil, vinegar, 1 garlic clove (minced), chopped parsley, chilli flakes, salt, and black pepper. Allow to marinate.Step 2.
For the chunky chopped tomato salsa, dice tomatoes and mix with a dash of olive oil, chopped coriander, lime juice, salt, and pepper. Adjust seasoning to taste.Step 3.
Toast the sourdough bread slices to your preferred crunchiness.Step 4.
Tear mozzarella balls into smaller pieces.Step 5.
Assemble your toast by spooning the chunky tomato salsa on the freshly toasted sourdough slices and top with the torn mozzarella.Step 6.
Drizzle the red onion chimichurri over the top, allowing some of the vinegar and olive oil to soak into the bread.Step 7.
Serve immediately while the toast is still warm and crunchy.
