METHOD

  • Step 1.

    Begin by preparing the red onion chimichurri. In a small bowl, mix together chopped red onion, olive oil, vinegar, 1 garlic clove (minced), chopped parsley, chilli flakes, salt, and black pepper. Allow to marinate.
  • Step 2.

    For the chunky chopped tomato salsa, dice tomatoes and mix with a dash of olive oil, chopped coriander, lime juice, salt, and pepper. Adjust seasoning to taste.
  • Step 3.

    Toast the sourdough bread slices to your preferred crunchiness.
  • Step 4.

    Tear mozzarella balls into smaller pieces.
  • Step 5.

    Assemble your toast by spooning the chunky tomato salsa on the freshly toasted sourdough slices and top with the torn mozzarella.
  • Step 6.

    Drizzle the red onion chimichurri over the top, allowing some of the vinegar and olive oil to soak into the bread.
  • Step 7.

    Serve immediately while the toast is still warm and crunchy.
