Spicy Aubergine & Shrimp Curry Recipe

This hot and tangy curry combines potatoes, aubergine, and green beans with succulent deep-fried shrimp and a fiery mix of spices.

METHOD

  • Step 1.

    Peel and dice the potatoes and aubergine into bite-sized pieces.
  • Step 2.

    Remove the stems from the green beans.
  • Step 3.

    Dice the chillies finely, removing the seeds if less heat is desired.
  • Step 4.

    Heat oil in a pan and add the potatoes, aubergine, and green beans. Cook until slightly tender.
  • Step 5.

    In a separate pan, deep fry the shrimp until golden brown and set aside. You could alternativly use an air-fryer if you prefer.
  • Step 6.

    In the same pan of vegetables, add the chillies and curry paste. Mix until all vegetables are coated.
  • Step 7.

    Add in water and coconut milk and let it simmer for 20 minutes until it reduces to desired thickness.
  • Step 8.

    Finally, stir in the deep-fried shrimp, ensuring they are well mixed into the curry. Let it cook for another 10 minutes.
  • Step 9.

    Serve the curry hot with rice or bread of choice.
