Spicy Aubergine & Shrimp Curry Recipe
This hot and tangy curry combines potatoes, aubergine, and green beans with succulent deep-fried shrimp and a fiery mix of spices.

METHOD
Step 1.
Peel and dice the potatoes and aubergine into bite-sized pieces.Step 2.
Remove the stems from the green beans.Step 3.
Dice the chillies finely, removing the seeds if less heat is desired.Step 4.
Heat oil in a pan and add the potatoes, aubergine, and green beans. Cook until slightly tender.Step 5.
In a separate pan, deep fry the shrimp until golden brown and set aside. You could alternativly use an air-fryer if you prefer.Step 6.
In the same pan of vegetables, add the chillies and curry paste. Mix until all vegetables are coated.Step 7.
Add in water and coconut milk and let it simmer for 20 minutes until it reduces to desired thickness.Step 8.
Finally, stir in the deep-fried shrimp, ensuring they are well mixed into the curry. Let it cook for another 10 minutes.Step 9.
Serve the curry hot with rice or bread of choice.
