METHOD

  • Step 1.

    Melt butter in a saucepan over medium heat. Stir in flour to create a roux, cooking for 1-2 minutes until bubbly.
  • Step 2.

    Gradually whisk in milk until the mixture is smooth. Cook, stirring constantly, until the mixture thickens.
  • Step 3.

    Reduce heat to low. Add grated cheddar cheese and cayenne pepper, stirring until the cheese is melted and the sauce is smooth. Season with salt to taste.
  • Step 4.

    In a separate pan (no oil), cook bacon over medium heat until crispy. Transfer to a paper towel-lined plate to drain. Once cool, chop into bits.
  • Step 5.

    Preheat oven to 180°C (350°F). Place tortillas on a baking sheet and lightly toast in the oven for 3-4 minutes until warm and slightly crispy.
  • Step 6.

    Spread a generous amount of the spicy nacho cheese sauce over each tortilla.
  • Step 7.

    Top with crispy bacon bits and fresh jalapeño slices.
  • Step 8.

    Bake in the oven for an additional 5-7 minutes or until everything is heated through and the edges of the tortillas are golden.
  • Step 9.

    Serve immediately, garnished with extra jalapeños and a pot of nacho cheese sauce if desired.
