METHOD
Step 1.
Melt butter in a saucepan over medium heat. Stir in flour to create a roux, cooking for 1-2 minutes until bubbly.Step 2.
Gradually whisk in milk until the mixture is smooth. Cook, stirring constantly, until the mixture thickens.Step 3.
Reduce heat to low. Add grated cheddar cheese and cayenne pepper, stirring until the cheese is melted and the sauce is smooth. Season with salt to taste.Step 4.
In a separate pan (no oil), cook bacon over medium heat until crispy. Transfer to a paper towel-lined plate to drain. Once cool, chop into bits.Step 5.
Preheat oven to 180°C (350°F). Place tortillas on a baking sheet and lightly toast in the oven for 3-4 minutes until warm and slightly crispy.Step 6.
Spread a generous amount of the spicy nacho cheese sauce over each tortilla.Step 7.
Top with crispy bacon bits and fresh jalapeño slices.Step 8.
Bake in the oven for an additional 5-7 minutes or until everything is heated through and the edges of the tortillas are golden.Step 9.
