Strawberries & Cream Cupcakes Recipe

These cupcakes are strawberry filled and topped with a luscious whipped cream frosting, a truly delightful treat.

METHOD

  • Step 1.

    Preheat the oven to 180°C (350°F) and line a cupcake pan with paper liners.
  • Step 2.

    In a bowl, whisk together 1 cup of all-purpose flour, 1 tsp of baking powder, and a pinch of salt.
  • Step 3.

    In a separate bowl, cream together 1/2 cup of unsalted butter and 3/4 cup of granulated sugar until light and fluffy.
  • Step 4.

    Beat in 2 large eggs, one at a time, and then mix in 1 tsp of vanilla extract.
  • Step 5.

    Gradually add the dry ingredients to the wet ingredients, alternating with 1/4 cup of milk, and mix until just combined.
  • Step 6.

    Gently fold in 1/2 cup of finely chopped fresh strawberries.
  • Step 7.

    Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Step 8.

    Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 9.

    Remove from the oven and let the cupcakes cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  • Step 10.

    For the Whipped Cream Frosting: In a mixing bowl, beat 1 cup of heavy whipping cream until soft peaks form. Add 2 tbsp of powdered sugar and 1 tsp of vanilla extract, and continue to beat until stiff peaks form.
  • Step 11.

    For Assembling: Once the cupcakes are completely cool, pipe or spread the whipped cream frosting on top of each cupcake. Garnish with sliced fresh strawberries on top of the whipped cream.
  • Step 12.

    Serve the Strawberry and Cream Cupcakes as delightful and light desserts.
