METHOD

  • Step 1.

    Preheat the oven to 190°C and line a muffin tray with paper cases.
  • Step 2.

    In a large bowl, mix together the flour, sugar, cocoa powder, baking powder and salt.
  • Step 3.

    In another smaller bowl, whisk together the egg, milk and vanilla extract.
  • Step 4.

    Gradually add the wet mixture to the dry ingredients. Stir gently until just combined.
  • Step 5.

    Fold in the melted butter and chocolate chips.
  • Step 6.

    Divide the batter evenly amongst the muffin cups, filling each about 3/4 full.
  • Step 7.

    Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
