Sun-Dried Tomatoes in Garlic Oil Recipe

METHOD

  • Step 1.

    Start by slicing the tomatoes into halves. Preheat oven to 200F or 95C.
  • Step 2.

    Using a baking tray, lay out the tomato halves and sprinkle with a bit of salt. Roast in oven for 4 to 6 hours, or until dried out.
  • Step 3.

    In a pan, heat the olive oil over low-medium heat and add sliced garlic till it turns golden brown.
  • Step 4.

    Turn off the heat and let the oil cool down.
  • Step 5.

    Once the tomatoes are dried, place them in a jar and pour the garlic oil over.
  • Step 6.

    Make sure the tomatoes are fully submerged in the oil. Close the jar and let it sit for a couple of days before using.
