METHOD
Step 1.
In a large bowl, mix the flour, baking powder, and salt.Step 2.
In a blender or food processor, blitz the soya milk, maple syrup, vanilla extract, and oil until smooth.Step 3.
Pour the liquid mixture into the dry ingredients and whisk until smooth.Step 4.
Leave the batter to rest for 10 minutes.Step 5.
Heat a non-stick frying pan over medium heat.Step 6.
Pour a ladleful of the batter into the pan and swirl to coat the base.Step 7.
Cook for a couple of minutes until golden brown, then flip and cook the other side.Step 8.
Remove from the pan and set aside. Repeat with the remaining batter.Step 9.
Serve with a drizzle of maple syrup and some frozen berries.
