METHOD
Step 1.
Combine oat milk, apple cider vinegar, pure maple syrup, and vanilla extract in a jug.Step 2.
In a separate bowl, mix gluten-free flour, baking powder, and fine sea salt.Step 3.
Pour the wet ingredients into the bowl with dry ingredients. Stir until combined, but be careful not to overmix, it should still be slightly lumpy.Step 4.
Heat up your non-stick frying pan on medium heat. Once hot, lower the heat slightly and add a small amount of coconut oil.Step 5.
Spoon approximately 60g of batter into the pan per pancake. Cook until bubbles form, then flip and cook the other side.Step 6.
Serve warm with additional maple syrup or any fruits of your choice.
