Carrot & Cinnamon Apple Muffins Recipe

METHOD
Step 1.
Preheat your oven to 180°C/gas mark 4 and line a muffin tin with paper cases.Step 2.
In a large bowl, mix the flour, bicarbonate of soda, ground cinnamon and nutmeg.Step 3.
In a separate bowl, beat the eggs until light and fluffy. Slowly add the sugar, butter, grated apple, and grated carrot. Mix thoroughly.Step 4.
Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.Step 5.
Divide the mixture evenly between the prepared muffin cases.Step 6.
Bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.Step 7.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

3 Eggs
200 gCaster sugar
150 mlUnsalted butter, melted
1 Apple, grated
2 Carrot, grated
