Carrot & Cinnamon Apple Muffins Recipe

METHOD

  • Step 1.

    Preheat your oven to 180°C/gas mark 4 and line a muffin tin with paper cases.
  • Step 2.

    In a large bowl, mix the flour, bicarbonate of soda, ground cinnamon and nutmeg.
  • Step 3.

    In a separate bowl, beat the eggs until light and fluffy. Slowly add the sugar, butter, grated apple, and grated carrot. Mix thoroughly.
  • Step 4.

    Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
  • Step 5.

    Divide the mixture evenly between the prepared muffin cases.
  • Step 6.

    Bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  • Step 7.

    Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  4. 1 tspGround nutmeg

  5. 3 Eggs

  6. 200 gCaster sugar

  7. 150 mlUnsalted butter, melted

  8. 1 Apple, grated

  9. 2 Carrot, grated
