Waffles with Dried Fruit and Maple Syrup Recipe

METHOD

  • Step 1.

    Preheat your waffle iron.
  • Step 2.

    In a bowl, mix together the self-raising flour, caster sugar, and baking powder. Make a well in the middle.
  • Step 3.

    In another bowl, beat the egg yolk, then add the milk and melted butter. Mix well.
  • Step 4.

    Pour the wet mixture into the well of the dry mixture, stirring to create a smooth batter.
  • Step 5.

    In a separate bowl, whisk the egg white until stiff peaks form and fold it into the batter.
  • Step 6.

    Pour enough batter into the preheated waffle iron to cover the surface, close the iron, and cook until the waffle is golden brown.
  • Step 7.

    Repeat with remaining batter.
  • Step 8.

    Top each waffle with a dollop of whipped cream, a sprinkle of dried fruit and drizzle with maple syrup before serving. Enjoy!
