Waffles with Dried Fruit and Maple Syrup Recipe

METHOD
Step 1.
Preheat your waffle iron.Step 2.
In a bowl, mix together the self-raising flour, caster sugar, and baking powder. Make a well in the middle.Step 3.
In another bowl, beat the egg yolk, then add the milk and melted butter. Mix well.Step 4.
Pour the wet mixture into the well of the dry mixture, stirring to create a smooth batter.Step 5.
In a separate bowl, whisk the egg white until stiff peaks form and fold it into the batter.Step 6.
Pour enough batter into the preheated waffle iron to cover the surface, close the iron, and cook until the waffle is golden brown.Step 7.
Repeat with remaining batter.Step 8.
Top each waffle with a dollop of whipped cream, a sprinkle of dried fruit and drizzle with maple syrup before serving. Enjoy!
