METHOD

  • Step 1.

    Start by preparing the chicken broth. In a large pot, bring 1.5 litres of water to a boil. Add the chicken breast and reduce to a simmer, cooking until the chicken is fully cooked.
  • Step 2.

    Remove the chicken breast from the broth. When cool enough to handle, shred it into bite-sized pieces and set aside.
  • Step 3.

    In the same pot with the broth, add the soy sauce, and sliced mushrooms. Simmer for 5 minutes.
  • Step 4.

    Add the ramen noodles to the pot and cook according to the package instructions, usually about 4 minutes.
  • Step 5.

    While the noodles are cooking, blanch the pok choy and carrots in a separate pot of boiling water for 2 minutes, until they are just tender. Drain.
  • Step 6.

    Divide the cooked noodles among serving bowls. Arrange shredded chicken, pok choy, carrots, and sliced spring onion on top.
  • Step 7.

    Ladle hot broth over the noodles and garnish with halved boiled eggs and a sprinkle of sesame seeds.
  • Step 8.

    Serve immediately, offering extra soy sauce or chilli oil at the table for those who like their ramen with a bit more kick.
