Wholesome Chicken Noodle Ramen with Vegetables & Boiled Egg Recipe

METHOD
Step 1.
Start by preparing the chicken broth. In a large pot, bring 1.5 litres of water to a boil. Add the chicken breast and reduce to a simmer, cooking until the chicken is fully cooked.Step 2.
Remove the chicken breast from the broth. When cool enough to handle, shred it into bite-sized pieces and set aside.Step 3.
In the same pot with the broth, add the soy sauce, and sliced mushrooms. Simmer for 5 minutes.Step 4.
Add the ramen noodles to the pot and cook according to the package instructions, usually about 4 minutes.Step 5.
While the noodles are cooking, blanch the pok choy and carrots in a separate pot of boiling water for 2 minutes, until they are just tender. Drain.Step 6.
Divide the cooked noodles among serving bowls. Arrange shredded chicken, pok choy, carrots, and sliced spring onion on top.Step 7.
Ladle hot broth over the noodles and garnish with halved boiled eggs and a sprinkle of sesame seeds.Step 8.
Serve immediately, offering extra soy sauce or chilli oil at the table for those who like their ramen with a bit more kick.
