METHOD
Step 1.
Boil or steam the beetroot until tender, then allow to cool.Step 2.
Peel the cooled beetroot and chop roughly.Step 3.
In a food processor, combine the chopped beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, and salt. Blend until smooth.Step 4.
Taste and adjust seasoning with more salt, cumin, or lemon juice as needed.Step 5.
Transfer the hummus to a serving dish, drizzle with a little extra olive oil, and sprinkle over some sesame seeds and chopped parsley for garnish.Step 6.
Chill in the fridge for at least 30 minutes before serving with your choice of fresh vegetables or pita bread.
