METHOD

  • Step 1.

    Boil or steam the beetroot until tender, then allow to cool.
  • Step 2.

    Peel the cooled beetroot and chop roughly.
  • Step 3.

    In a food processor, combine the chopped beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, and salt. Blend until smooth.
  • Step 4.

    Taste and adjust seasoning with more salt, cumin, or lemon juice as needed.
  • Step 5.

    Transfer the hummus to a serving dish, drizzle with a little extra olive oil, and sprinkle over some sesame seeds and chopped parsley for garnish.
  • Step 6.

    Chill in the fridge for at least 30 minutes before serving with your choice of fresh vegetables or pita bread.
