Garlicky & Citrusy Roasted Winter Veg Recipe

METHOD

  • Step 1.

    Preheat the oven to 200C/180C Fan/Gas 6.
  • Step 2.

    Wash and then trim carrots/parsnips. Toss them in olive oil, salt, and pepper and place on a roasting tray.
  • Step 3.

    Roast in the oven for 30 minutes.
  • Step 4.

    Cut the top off the head of garlic, drizzle with oil, wrap in foil and add to the oven with the vegetables.
  • Step 5.

    Roast for an additional 30 minutes.
  • Step 6.

    During the last 10 minutes of roasting, toast the nuts in a pan (no oil) until golden, then crush.
  • Step 7.

    Peel and segment the oranges, then peel the segments. Set aside.
  • Step 8.

    Remove vegetables and garlic from the oven and squeeze out the roasted garlic cloves.
  • Step 9.

    Top the roasted vegetables with the orange segments, roasted garlic, crushed nuts, and Nigella seeds.
  • Step 10.

    Serve and enjoy as a side dish or appetiser.

  8. 150 gMixed nuts
