Garlicky & Citrusy Roasted Winter Veg Recipe

METHOD
Step 1.
Preheat the oven to 200C/180C Fan/Gas 6.Step 2.
Wash and then trim carrots/parsnips. Toss them in olive oil, salt, and pepper and place on a roasting tray.Step 3.
Roast in the oven for 30 minutes.Step 4.
Cut the top off the head of garlic, drizzle with oil, wrap in foil and add to the oven with the vegetables.Step 5.
Roast for an additional 30 minutes.Step 6.
During the last 10 minutes of roasting, toast the nuts in a pan (no oil) until golden, then crush.Step 7.
Peel and segment the oranges, then peel the segments. Set aside.Step 8.
Remove vegetables and garlic from the oven and squeeze out the roasted garlic cloves.Step 9.
Top the roasted vegetables with the orange segments, roasted garlic, crushed nuts, and Nigella seeds.Step 10.
Serve and enjoy as a side dish or appetiser.
