Vegan Tomato Spaghetti Recipe

METHOD
Step 1.
In a large pan, heat the olive oil over medium heat.Step 2.
Add the garlic and sauté until fragrant, then add the chopped tomatoes, tomato purée, basil, vegetable stock and salt. Let it simmer for around 20 minutes until the tomatoes have broken down and the sauce has thickened.Step 3.
While the sauce is simmering, cook the spaghetti according to the package instructions until al dente. Then drain and set aside.Step 4.
Combine the cooked spaghetti with the tomato sauce, mix well to coat the spaghetti evenly with the sauce.Step 5.
Serve hot and garnish with fresh basil leaves if you like.
