Breakfast Banana Waffle Recipe

A delightful treat combining the crunch of pecans with the sweetness of chocolate and banana, served atop a classic Belgian waffle.

METHOD

  • Step 1.

    Preheat your waffle iron according to the manufacturer's instructions.
  • Step 2.

    In a large bowl, mix together 250g of plain flour, 1 tbsp of baking powder, 2 tbsp of sugar, and a pinch of salt.
  • Step 3.

    In another bowl, whisk together 300ml of milk, 100ml of melted unsalted butter, and 2 eggs.
  • Step 4.

    Pour the wet ingredients into the dry ingredients and stir until combined.
  • Step 5.

    Lightly grease the waffle iron with butter or cooking spray. Pour enough batter into the iron to just cover the waffle grid.
  • Step 6.

    Cook according to the waffle maker's instructions until golden and crisp.
  • Step 7.

    For the topping, slice 1 banana and toast 60g of pecans in a dry pan until fragrant.
  • Step 8.

    Serve the waffles hot with banana slices, toasted pecans, chocolate sauce drizzled over, and a dusting of icing sugar if desired.
