Chocolate Brownies with a Sticky Toffee Centre Recipe

METHOD
Step 1.
Preheat your oven to 175°C. Line a baking tin with greaseproof paper.Step 2.
For the brownie batter: In a mixing bowl, combine 175g of melted butter with 200g caster sugar, 2 tsp vanilla extract, and 2 large eggs. Mix until smooth.Step 3.
Sieve in 80g cocoa powder, 50g plain flour, and a pinch of salt. Fold gently until the batter is well combined.Step 4.
Pour half of the batter into the prepared tin, spreading evenly.Step 5.
For the sticky toffee centre: In another bowl, mix 150g soft dates, finely chopped with 100ml boiling water and 1 tsp bicarbonate of soda. Stir in 50g melted butter, 75g dark brown soft sugar, and 2 tbsp golden syrup until smooth.Step 6.
Pour the toffee mixture over the brownie layer in the tin, then top with the remaining brownie batter, spreading carefully to cover the toffee.Step 7.
Bake in the preheated oven for 25-30 minutes or until the top is firm but the inside feels soft.Step 8.
Allow to cool in the tin before slicing into portions.Step 9.
Serve each portion with a dollop of whipped cream or ice cream for extra indulgence.
