Chocolate Brownies with a Sticky Toffee Centre Recipe

METHOD

  • Step 1.

    Preheat your oven to 175°C. Line a baking tin with greaseproof paper.
  • Step 2.

    For the brownie batter: In a mixing bowl, combine 175g of melted butter with 200g caster sugar, 2 tsp vanilla extract, and 2 large eggs. Mix until smooth.
  • Step 3.

    Sieve in 80g cocoa powder, 50g plain flour, and a pinch of salt. Fold gently until the batter is well combined.
  • Step 4.

    Pour half of the batter into the prepared tin, spreading evenly.
  • Step 5.

    For the sticky toffee centre: In another bowl, mix 150g soft dates, finely chopped with 100ml boiling water and 1 tsp bicarbonate of soda. Stir in 50g melted butter, 75g dark brown soft sugar, and 2 tbsp golden syrup until smooth.
  • Step 6.

    Pour the toffee mixture over the brownie layer in the tin, then top with the remaining brownie batter, spreading carefully to cover the toffee.
  • Step 7.

    Bake in the preheated oven for 25-30 minutes or until the top is firm but the inside feels soft.
  • Step 8.

    Allow to cool in the tin before slicing into portions.
  • Step 9.

    Serve each portion with a dollop of whipped cream or ice cream for extra indulgence.
