Chocolate Chip Florentine Cookies Recipe
An exceptional tea-time treat, these Florentine cookies have the perfect balance of crunchy texture from the almonds, sweetness from the honey and bitterness from the dark chocolate.

METHOD
Step 1.
Preheat your oven to 180C/160C Fan/Gas 4. Line two baking trays with baking parchment.Step 2.
Put the butter, sugar and honey in a small pan and heat gently until the butter has melted.Step 3.
Remove the pan from the heat and add the flour, mixed peel, dried cherries, almonds and chocolate chips.Step 4.
Divide the mixture into small round piles on the lined baking trays. Be sure to leave plenty of space between each one as they spread out during baking.Step 5.
Bake for 6-8 minutes, or until golden-brown. Leave the florentines to cool before lifting onto a cooling rack.
