Chocolate Chip Florentine Cookies Recipe

An exceptional tea-time treat, these Florentine cookies have the perfect balance of crunchy texture from the almonds, sweetness from the honey and bitterness from the dark chocolate.

METHOD

  • Step 1.

    Preheat your oven to 180C/160C Fan/Gas 4. Line two baking trays with baking parchment.
  • Step 2.

    Put the butter, sugar and honey in a small pan and heat gently until the butter has melted.
  • Step 3.

    Remove the pan from the heat and add the flour, mixed peel, dried cherries, almonds and chocolate chips.
  • Step 4.

    Divide the mixture into small round piles on the lined baking trays. Be sure to leave plenty of space between each one as they spread out during baking.
  • Step 5.

    Bake for 6-8 minutes, or until golden-brown. Leave the florentines to cool before lifting onto a cooling rack.
