Choripán Grilled Chorizo Sandwich Recipe

METHOD

  • Step 1.

    Preheat a grill for medium heat.
  • Step 2.

    Place whole bell peppers and chorizo on the grill, turning frequently until the sausage has browned and the peppers have blistered and become soft, about 10-15 minutes.
  • Step 3.

    Remove charred skin from bell peppers and chop into slices.
  • Step 4.

    Slice the bread rolls down the middle.
  • Step 5.

    Place open-faced on the grill to toast, about 5 minutes.
  • Step 6.

    To construct the sandwiches, spread a generous amount of chimichurri on the bread, layer with slices of grilled bell pepper and top with the chorizo and fresh slices or onion. Serve with any leftover chimichurri sauce.
