Classic Custard Cream & Strawberry Croissant Recipe

METHOD
Step 1.
Preheat your oven to 190°C (375°F).Step 2.
Slice each croissant horizontally in half without cutting all the way through.Step 3.
In a bowl, mix together the egg yolks, sugar, and cornflour until smooth.Step 4.
In a saucepan, heat the milk until just boiling, then gradually whisk it into the egg mixture.Step 5.
Return the mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens.Step 6.
Remove from heat, stir in the vanilla extract, and let cool slightly. Cover the surface with cling film to prevent a skin from forming.Step 7.
Wash and slice the strawberries as desired.Step 8.
Bake the croissants in the preheated oven for 3-5 minutes, or until lightly toasted.Step 9.
Once the croissants have cooled slightly, spoon the custard cream into the sliced croissants. Add a layer of sliced strawberries, and then gently press the croissants to close.Step 10.
Dust with icing sugar and serve.
