Classic Custard Cream & Strawberry Croissant Recipe

METHOD

  • Step 1.

    Preheat your oven to 190°C (375°F).
  • Step 2.

    Slice each croissant horizontally in half without cutting all the way through.
  • Step 3.

    In a bowl, mix together the egg yolks, sugar, and cornflour until smooth.
  • Step 4.

    In a saucepan, heat the milk until just boiling, then gradually whisk it into the egg mixture.
  • Step 5.

    Return the mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens.
  • Step 6.

    Remove from heat, stir in the vanilla extract, and let cool slightly. Cover the surface with cling film to prevent a skin from forming.
  • Step 7.

    Wash and slice the strawberries as desired.
  • Step 8.

    Bake the croissants in the preheated oven for 3-5 minutes, or until lightly toasted.
  • Step 9.

    Once the croissants have cooled slightly, spoon the custard cream into the sliced croissants. Add a layer of sliced strawberries, and then gently press the croissants to close.
  • Step 10.

    Dust with icing sugar and serve.

  3. 100 gCaster sugar

  4. 25 gCornflour

  5. 500 mlMilk

  6. 1 tspVanilla extract

  7. 200 gFresh strawberries

  8. 1 tbspIcing sugar, for dusting
