Classic Macaron with Vanilla Buttercream Recipe

METHOD

  • Step 1.

    Preheat oven to 160°C and line two baking sheets with baking paper.
  • Step 2.

    Sieve the icing sugar and ground almonds together into a large mixing bowl.
  • Step 3.

    In another bowl, whip the egg whites until they form soft peaks. Add the caster sugar and continue to whip until they're thick and glossy.
  • Step 4.

    Carefully fold the egg whites into the almond mixture using a spatula, trying not to knock out too much air.
  • Step 5.

    Fill the piping bag with the batter, and pipe small rounds onto the baking sheets.
  • Step 6.

    Leave them to rest for 30 minutes until they form a skin on top.
  • Step 7.

    Bake for 10-15 minutes in the middle of the oven.
  • Step 8.

    Allow them to cool before sandwiching them together with buttercream icing.

  4. 50 gCaster sugar

  5. 1 cupVanilla buttercream icing
