METHOD
Step 1.
Preheat oven to 160°C and line two baking sheets with baking paper.Step 2.
Sieve the icing sugar and ground almonds together into a large mixing bowl.Step 3.
In another bowl, whip the egg whites until they form soft peaks. Add the caster sugar and continue to whip until they're thick and glossy.Step 4.
Carefully fold the egg whites into the almond mixture using a spatula, trying not to knock out too much air.Step 5.
Fill the piping bag with the batter, and pipe small rounds onto the baking sheets.Step 6.
Leave them to rest for 30 minutes until they form a skin on top.Step 7.
Bake for 10-15 minutes in the middle of the oven.Step 8.
Allow them to cool before sandwiching them together with buttercream icing.
