METHOD

  • Step 1.

    Rinse the scallops under cold water and pat them dry with paper towels.
  • Step 2.

    Season scallops on both sides with salt and pepper to taste.
  • Step 3.

    Heat a skillet over medium-high heat and add olive oil once hot.
  • Step 4.

    Carefully place scallops in the pan, making sure they are not touching each other. Sear scallops for about 1½-2 minutes on one side, or until a golden crust forms.
  • Step 5.

    Gently flip the scallops and add butter, garlic, and fresh thyme to the pan around the scallops. Sear for another 1½ minutes or until the opposite side is golden brown.
  • Step 6.

    Spoon the melted butter over the scallops while they cook for the final minute.
  • Step 7.

    Remove the scallops from the pan, squeezing fresh lemon juice over them before serving.
  • Step 8.

    Serve immediately, garnished with additional fresh thyme leaves and a side of your choice.
