METHOD
Step 1.
Rinse the scallops under cold water and pat them dry with paper towels.Step 2.
Season scallops on both sides with salt and pepper to taste.Step 3.
Heat a skillet over medium-high heat and add olive oil once hot.Step 4.
Carefully place scallops in the pan, making sure they are not touching each other. Sear scallops for about 1½-2 minutes on one side, or until a golden crust forms.Step 5.
Gently flip the scallops and add butter, garlic, and fresh thyme to the pan around the scallops. Sear for another 1½ minutes or until the opposite side is golden brown.Step 6.
Spoon the melted butter over the scallops while they cook for the final minute.Step 7.
Remove the scallops from the pan, squeezing fresh lemon juice over them before serving.Step 8.
Serve immediately, garnished with additional fresh thyme leaves and a side of your choice.
