Spicy Mango & Crispy Catfish Tacos Recipe

METHOD
Step 1.
Begin by mixing the mango, red onion, chopped coriander, lime juice, peppers and sliced chilli in a bowl. Season with salt to taste for the mango salsa.Step 2.
In another bowl, combine flour, paprika, garlic powder, salt, and pepper. Coat the catfish fillets in this mixture.Step 3.
Heat oil in a pan over medium heat. Fry the catfish until crispy and golden, about 4-5 minutes on each side. Once cooked, let them rest on a paper towel.Step 4.
Warm the tortillas in a dry pan.Step 5.
To assemble, place a piece of crispy catfish on each tortilla. Top with the spicy mango salsa.Step 6.
Garnish with extra coriander leaves and a squeeze of lime juice before serving.
