METHOD
Step 1.
In a medium saucepan, combine milk, cream, and half the sugar. Warm through over medium heat until the mixture is hot but not boiling.Step 2.
Whisk egg yolks and the remaining sugar in a bowl until the mixture becomes thick and pale.Step 3.
Gradually pour the warm milk mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.Step 4.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon.Step 5.
Remove from heat and add chopped dark chocolate, stirring until the chocolate has completely melted and the mixture is smooth.Step 6.
Puree the figs in a blender or food processor until smooth. If desired, strain to remove any seeds for a smoother texture.Step 7.
Stir the fig puree into the chocolate mixture until fully incorporated.Step 8.
Cool the mixture completely, then refrigerate until thoroughly chilled, preferably overnight.Step 9.
Churn the mixture in an ice cream maker according to the manufacturer's instructions.Step 10.
Transfer the gelato to a freezer-safe container and freeze until firm, about 2-3 hours, before serving.
