METHOD

  • Step 1.

    In a medium saucepan, combine milk, cream, and half the sugar. Warm through over medium heat until the mixture is hot but not boiling.
  • Step 2.

    Whisk egg yolks and the remaining sugar in a bowl until the mixture becomes thick and pale.
  • Step 3.

    Gradually pour the warm milk mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  • Step 4.

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon.
  • Step 5.

    Remove from heat and add chopped dark chocolate, stirring until the chocolate has completely melted and the mixture is smooth.

    Puree the figs in a blender or food processor until smooth. If desired, strain to remove any seeds for a smoother texture.

    Stir the fig puree into the chocolate mixture until fully incorporated.
