Dark Chocolate & Fig Gelato Recipe

This recipe merges the rich essence of dark chocolate with the sweet nuances of figs to create a sumptuous gelato perfect for any dessert occasion.

  • Step 1.

In a medium saucepan, combine milk, cream, and half the sugar. Warm through over medium heat until the mixture is hot but not boiling.
  • Step 2.

Whisk egg yolks and the remaining sugar in a bowl until the mixture becomes thick and pale.
  • Step 3.

Gradually pour the warm milk mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  • Step 4.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon.
  • Step 5.

Remove from heat and add chopped dark chocolate, stirring until the chocolate has completely melted and the mixture is smooth.
  • Step 6.

Puree the figs in a blender or food processor until smooth. If desired, strain to remove any seeds for a smoother texture.
  • Step 7.

Stir the fig puree into the chocolate mixture until fully incorporated.
  • Step 8.

Cool the mixture completely, then refrigerate until thoroughly chilled, preferably overnight.
  • Step 9.

Churn the mixture in an ice cream maker according to the manufacturer's instructions.
  • Step 10.

Transfer the gelato to a freezer-safe container and freeze until firm, about 2-3 hours, before serving.
