METHOD

  • Step 1.

    Gently heat the milk and single cream in a saucepan over medium heat until it begins to simmer, then remove from heat.
  • Step 2.

    Add the Earl Grey tea leaves to the mixture and let steep for 20 minutes to infuse the flavours.
  • Step 3.

    Through a fine sieve, strain the mixture to remove the tea leaves, then return the infused liquid to the saucepan.
  • Step 4.

    Whisk together the egg yolks and caster sugar in a separate bowl until light and creamy.
  • Step 5.

    Gradually pour the infused milk mixture into the egg yolk mixture, stirring continuously, to create the custard base.
  • Step 6.

    Return the custard to the saucepan and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon. Do not allow to boil.
  • Step 7.

    Pour the custard into a bowl, cover the surface directly with cling film to prevent a skin from forming, and chill in the refrigerator until completely cold, about 2 hours.
  • Step 8.

    Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to a freezer-safe container, cover, and freeze until firm, about 1 hour.

    Allow the gelato to sit at room temperature for a few minutes before serving to soften slightly for easier scooping.
