METHOD
Step 1.
Gently heat the milk and single cream in a saucepan over medium heat until it begins to simmer, then remove from heat.Step 2.
Add the Earl Grey tea leaves to the mixture and let steep for 20 minutes to infuse the flavours.Step 3.
Through a fine sieve, strain the mixture to remove the tea leaves, then return the infused liquid to the saucepan.Step 4.
Whisk together the egg yolks and caster sugar in a separate bowl until light and creamy.Step 5.
Gradually pour the infused milk mixture into the egg yolk mixture, stirring continuously, to create the custard base.Step 6.
Return the custard to the saucepan and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon. Do not allow to boil.Step 7.
Pour the custard into a bowl, cover the surface directly with cling film to prevent a skin from forming, and chill in the refrigerator until completely cold, about 2 hours.Step 8.
Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.Step 9.
Transfer the gelato to a freezer-safe container, cover, and freeze until firm, about 1 hour.Step 10.
