Hearty Winter Vegetable Stew Recipe

METHOD

  • Step 1.

    Heat the oil in a large pan over medium heat.
  • Step 2.

    Add the onions and garlic and cook until soft.
  • Step 3.

    Add the carrots and parsnips stirring well to combine. Cook for 10 minutes or until the vegetables start to soften.
  • Step 4.

    Add the flour, stirring well to coat the vegetables.
  • Step 5.

    Gradually add the vegetable stock, stirring well to combine.
  • Step 6.

    Add the bay leaves, thyme, salt and pepper.
  • Step 7.

    Cover the pan, reduce the heat to low, and simmer for 1 hour or until the vegetables are tender.
  • Step 8.

    Remove the bay leaves and thyme, then serve with a side of bread.

  8. 2 Bay leaves

  9. 2 Fresh thyme sprigs

  10. 1 tspSalt

  11. 0.5 tspBlack pepper
