Hearty Winter Vegetable Stew Recipe

METHOD
Step 1.
Heat the oil in a large pan over medium heat.Step 2.
Add the onions and garlic and cook until soft.Step 3.
Add the carrots and parsnips stirring well to combine. Cook for 10 minutes or until the vegetables start to soften.Step 4.
Add the flour, stirring well to coat the vegetables.Step 5.
Gradually add the vegetable stock, stirring well to combine.Step 6.
Add the bay leaves, thyme, salt and pepper.Step 7.
Cover the pan, reduce the heat to low, and simmer for 1 hour or until the vegetables are tender.Step 8.
Remove the bay leaves and thyme, then serve with a side of bread.
