METHOD
Step 1.
Toast the pistachios in a pan over low heat until aromatic, then let them cool.Step 2.
Crush the toasted pistachios in a food processor until finely chopped.Step 3.
In a saucepan, warm the milk, sugar, and a pinch of salt, stirring until the sugar is dissolved.Step 4.
Whisk the egg yolks in a separate bowl and then gradually add some of the warm milk mixture to temper the eggs.Step 5.
Return the egg mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens.Step 6.
Remove from the heat and stir in the heavy cream and vanilla extract.Step 7.
Strain the mixture to remove any lumps, then add the crushed pistachios.Step 8.
Chill the mixture in the refrigerator for at least 3 hours.Step 9.
Churn the mixture in an ice cream maker according to the manufacturer's instructions.Step 10.
Transfer the ice cream to a freeze-proof container and freeze until firm, about 4 hours or overnight.
