Homemade Pistachio Ice Cream Recipe

METHOD

  • Step 1.

    Toast the pistachios in a pan over low heat until aromatic, then let them cool.
  • Step 2.

    Crush the toasted pistachios in a food processor until finely chopped.
  • Step 3.

    In a saucepan, warm the milk, sugar, and a pinch of salt, stirring until the sugar is dissolved.
  • Step 4.

    Whisk the egg yolks in a separate bowl and then gradually add some of the warm milk mixture to temper the eggs.
  • Step 5.

    Return the egg mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens.
  • Step 6.

    Remove from the heat and stir in the heavy cream and vanilla extract.
  • Step 7.

    Strain the mixture to remove any lumps, then add the crushed pistachios.
  • Step 8.

    Chill the mixture in the refrigerator for at least 3 hours.
  • Step 9.

    Churn the mixture in an ice cream maker according to the manufacturer's instructions.

    Transfer the ice cream to a freeze-proof container and freeze until firm, about 4 hours or overnight.
