Homemade Tapioca Pearl Pudding Recipe

METHOD

  • Step 1.

    Soak tapioca pearls in water for 1 hour, then drain.
  • Step 2.

    In a saucepan, over medium heat, combine milk, salt, and 50g of sugar.
  • Step 3.

    Stir until all sugar is dissolved, then add the soaked and drained tapioca pearls.
  • Step 4.

    Reduce the heat to low and let simmer for 45-50 minutes until the tapioca pearls become translucent, stirring often.
  • Step 5.

    Meanwhile, beat egg yolks with the remaining sugar.
  • Step 6.

    Slowly add a little of the hot milk mixture into the yolks, continuously stirring to prevent the eggs from scrambling.
  • Step 7.

    Pour the egg mixture back into the saucepan with the rest of the milk and tapioca. Cook for an additional 20-25 minutes until thickened, remember to stir often.
  • Step 8.

    Remove from heat and stir in the vanilla extract.
  • Step 9.

    Let the pudding cool down before serving. It can be served warm or cold according to preference.
  • Step 10.

    Top with cinnamon and star anise to garnish.
