METHOD
Step 1.
Soak tapioca pearls in water for 1 hour, then drain.Step 2.
In a saucepan, over medium heat, combine milk, salt, and 50g of sugar.Step 3.
Stir until all sugar is dissolved, then add the soaked and drained tapioca pearls.Step 4.
Reduce the heat to low and let simmer for 45-50 minutes until the tapioca pearls become translucent, stirring often.Step 5.
Meanwhile, beat egg yolks with the remaining sugar.Step 6.
Slowly add a little of the hot milk mixture into the yolks, continuously stirring to prevent the eggs from scrambling.Step 7.
Pour the egg mixture back into the saucepan with the rest of the milk and tapioca. Cook for an additional 20-25 minutes until thickened, remember to stir often.Step 8.
Remove from heat and stir in the vanilla extract.Step 9.
Let the pudding cool down before serving. It can be served warm or cold according to preference.Step 10.
Top with cinnamon and star anise to garnish.
