METHOD
Step 1.
Combine milk, cream, and matcha powder in a saucepan. Gently heat until the mixture is hot but not boiling, stirring constantly to dissolve the matcha.Step 2.
In a separate bowl, whisk together the egg yolks and sugar until thick and pale.Step 3.
Gradually pour the hot matcha mixture into the egg mixture, stirring constantly to prevent the eggs from scrambling.Step 4.
Return the combined mixture to the saucepan and heat gently, stirring continuously until the mixture thickens enough to coat the back of a spoon.Step 5.
Remove from heat and strain the mixture through a fine sieve into a clean bowl. Allow to cool to room temperature, then cover and chill in the fridge for at least 3 hours.Step 6.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.Step 7.
Transfer the churned ice cream to a freezer-safe container and freeze until solid, approximately 2 hours.
