METHOD

  • Step 1.

    Combine milk, cream, and matcha powder in a saucepan. Gently heat until the mixture is hot but not boiling, stirring constantly to dissolve the matcha.
  • Step 2.

    In a separate bowl, whisk together the egg yolks and sugar until thick and pale.
  • Step 3.

    Gradually pour the hot matcha mixture into the egg mixture, stirring constantly to prevent the eggs from scrambling.
  • Step 4.

    Return the combined mixture to the saucepan and heat gently, stirring continuously until the mixture thickens enough to coat the back of a spoon.
  • Step 5.

    Remove from heat and strain the mixture through a fine sieve into a clean bowl. Allow to cool to room temperature, then cover and chill in the fridge for at least 3 hours.
  • Step 6.

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  • Step 7.

    Transfer the churned ice cream to a freezer-safe container and freeze until solid, approximately 2 hours.
