METHOD
Step 1.
Preheat the oven to 220 degrees Celsius and lightly dust a baking tray.Step 2.
In a large bowl, mix the flour and salt. Cut the cold butter into small pieces add to the flour. The mixture should resemble coarse crumbs.Step 3.
Pour water into the mixture and stir until the dough comes together.Step 4.
Roll the dough into a cylinder and cut into 6 equal pieces. Flatten each piece on a lightly floured surface into a circular shape.Step 5.
Spread the strawberry jam on each piece of dough, leaving a border at the edges.Step 6.
Fold the edges of the dough over the jam to create a galette shape, then place on the baking tray.Step 7.
Beat the egg and brush over the crust. Sprinkle with sugar.Step 8.
Bake for 20-25 minutes or until the crust is golden brown. Allow to cool for a few minutes before serving.
