Pancakes with Berries & Cream Recipe
These delicious pancakes are uber fluffy, lightly sweet, dotted with juicy strawberries and blueberries. Perfect for your morning breakfast or brunch!

METHOD
Step 1.
In a large mixing bowl, combine the flour, sugar, baking powder, and salt.Step 2.
In another bowl, whisk together the milk, egg, and melted butter.Step 3.
Gradually add the wet ingredients into the dry ingredients, mixing gently until just combined. Do not overmix.Step 4.
Gently fold in 100 grams of the chopped strawberries and blueberries.Step 5.
Heat a large frying pan over medium heat and lightly grease with butter.Step 6.
Pour 1/4 cup of pancake batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.Step 7.
Serve the pancakes warm with a splash of cream, dusting of icing sugar and a few extra berries.

3 tbspUnsalted butter, melted
130 gStrawberries, diced
150 gBlueberries
1 tspButter, for greasing
2 tbspDouble cream, to serve
1 tspIcing sugar, to garnish
