Pancakes with Berries & Cream Recipe

These delicious pancakes are uber fluffy, lightly sweet, dotted with juicy strawberries and blueberries. Perfect for your morning breakfast or brunch!

METHOD

  • Step 1.

    In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • Step 2.

    In another bowl, whisk together the milk, egg, and melted butter.
  • Step 3.

    Gradually add the wet ingredients into the dry ingredients, mixing gently until just combined. Do not overmix.
  • Step 4.

    Gently fold in 100 grams of the chopped strawberries and blueberries.
  • Step 5.

    Heat a large frying pan over medium heat and lightly grease with butter.
  • Step 6.

    Pour 1/4 cup of pancake batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  • Step 7.

    Serve the pancakes warm with a splash of cream, dusting of icing sugar and a few extra berries.

  7. 3 tbspUnsalted butter, melted

  8. 130 gStrawberries, diced

  9. 150 gBlueberries

  10. 1 tspButter, for greasing

  11. 2 tbspDouble cream, to serve

  12. 1 tspIcing sugar, to garnish
