Pulled Pork Taquitos with Pineapple & Red Cabbage Recipe

Delight in these tantalising pulled pork taquitos, bursting with the sweetness of pineapple, the crunch of red cabbage, and the zest of lime, all wrapped up in a corn tortilla and sprinkled with parsley.





  • Step 1.

    Preheat your oven to 160°C.
  • Step 2.

    In a bowl, mix pulled pork with lime juice, salt, and pepper to taste.
  • Step 3.

    Take a corn tortilla, place a generous amount of the pulled pork mixture in the centre, followed by slices of pineapple and a sprinkle of shredded red cabbage.
  • Step 4.

    Tightly roll the tortilla and secure it with a toothpick.
  • Step 5.

    Place the taquitos on a baking tray lined with parchment paper.
  • Step 6.

    Bake in the preheated oven for about 20-25 minutes, or until crispy.
  • Step 7.

    Remove from oven and let them cool slightly.
  • Step 8.

    Serve the taquitos garnished with fresh parsley and a wedge of lime on the side.
