METHOD
Step 1.
Preheat your oven to 160°C.Step 2.
In a bowl, mix pulled pork with lime juice, salt, and pepper to taste.Step 3.
Take a corn tortilla, place a generous amount of the pulled pork mixture in the centre, followed by slices of pineapple and a sprinkle of shredded red cabbage.Step 4.
Tightly roll the tortilla and secure it with a toothpick.Step 5.
Place the taquitos on a baking tray lined with parchment paper.Step 6.
Bake in the preheated oven for about 20-25 minutes, or until crispy.Step 7.
Remove from oven and let them cool slightly.Step 8.
