METHOD

  • Step 1.

    Preheat your oven to 180°C (160°C fan assisted).
  • Step 2.

    Grease and line with parchment a medium-sized baking tray.
  • Step 3.

    In a mixing bowl, combine the rhubarb, 100g caster sugar, and vanilla extract. Spread evenly at the bottom of the tray.
  • Step 4.

    In another bowl, mix together the flour, remaining caster sugar, and butter with your fingertips to make a crumbly mixture.
  • Step 5.

    Sprinkle the crumble mixture over the rhubarb layer.
  • Step 6.

    Bake for 45-50 minutes or until the crumble is golden brown and the rhubarb is tender.
  • Step 7.

    Allow to cool slightly before slicing. Serve warm or at room temperature, ideally with a dollop of cream or custard.
