METHOD
Step 1.
Preheat your oven to 180°C (160°C fan assisted).Step 2.
Grease and line with parchment a medium-sized baking tray.Step 3.
In a mixing bowl, combine the rhubarb, 100g caster sugar, and vanilla extract. Spread evenly at the bottom of the tray.Step 4.
In another bowl, mix together the flour, remaining caster sugar, and butter with your fingertips to make a crumbly mixture.Step 5.
Sprinkle the crumble mixture over the rhubarb layer.Step 6.
Bake for 45-50 minutes or until the crumble is golden brown and the rhubarb is tender.Step 7.
Allow to cool slightly before slicing. Serve warm or at room temperature, ideally with a dollop of cream or custard.
