Rose Infused Chocolate Praline Balls Recipe
A decadent treat blending the delicate flavour of roses with rich chocolate and crunchy pralines.

METHOD
Step 1.
Begin by finely chopping the pralines and setting them aside.Step 2.
In a saucepan, gently heat the cream until it just begins to simmer, then remove from heat.Step 3.
Add the dried rose petals to the cream, cover, and allow to infuse for 20 minutes.Step 4.
After infusion, strain the cream through a fine-mesh sieve to remove the petals and reheat the cream until it simmers.Step 5.
Break the chocolate into small pieces and place in a bowl. Pour the warm cream over the chocolate and let sit for 5 minutes.Step 6.
Whisk the chocolate and cream together until a smooth ganache forms.Step 7.
Stir in rose water to the ganache, then chill in the refrigerator until set, about 1 hour.Step 8.
Once set, use a teaspoon to scoop out the ganache and roll into balls.Step 9.
Roll each ball in the chopped pralines until well coated.Step 10.
Place the coated balls on a tray lined with parchment paper and refrigerate until firm, about 30 minutes.
