Rose Infused Chocolate Praline Balls Recipe

METHOD

  • Step 1.

    Begin by finely chopping the pralines and setting them aside.
  • Step 2.

    In a saucepan, gently heat the cream until it just begins to simmer, then remove from heat.
  • Step 3.

    Add the dried rose petals to the cream, cover, and allow to infuse for 20 minutes.
  • Step 4.

    After infusion, strain the cream through a fine-mesh sieve to remove the petals and reheat the cream until it simmers.
  • Step 5.

    Break the chocolate into small pieces and place in a bowl. Pour the warm cream over the chocolate and let sit for 5 minutes.
  • Step 6.

    Whisk the chocolate and cream together until a smooth ganache forms.
  • Step 7.

    Stir in rose water to the ganache, then chill in the refrigerator until set, about 1 hour.
  • Step 8.

    Once set, use a teaspoon to scoop out the ganache and roll into balls.
  • Step 9.

    Roll each ball in the chopped pralines until well coated.
  • Step 10.

    Place the coated balls on a tray lined with parchment paper and refrigerate until firm, about 30 minutes.
