METHOD
Step 1.
In a mixing bowl, combine the warm water, molasses, and yeast. Let it sit for about 5 minutes, until foamy.Step 2.
Add the rye flour, all-purpose flour, salt, and caraway seeds to the yeast mixture. Mix until a dough forms.Step 3.
Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.Step 4.
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 2 hours, or until doubled in size.Step 5.
Punch down the risen dough and shape it into a loaf. Place the loaf in a greased 9x5-inch loaf pan.Step 6.
Cover the pan with a clean towel and let the dough rise again for about 45 minutes.Step 7.
Preheat the oven to 350°F (175°C). Bake the bread for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped.Step 8.
Remove the bread from the oven and let it cool in the pan for a few minutes. Then, transfer the bread to a wire rack to cool completely.Step 9.
Once cooled, slice the homemade rye bread and enjoy with a thick spread of butter.Step 10.
Store any leftover bread in an airtight container.
