METHOD

  • Step 1.

    Combine warm milk, yeast, and one tsp sugar in a bowl. Let it sit until frothy, about 15 minutes.
  • Step 2.

    In a large bowl, whisk together flour, cinnamon, nutmeg, and the remaining sugar.
  • Step 3.

    Make a well in the centre of the flour mixture and add the yeast mixture, melted butter, egg, and dried fruit. Mix until a soft dough forms.
  • Step 4.

    On a floured surface, knead the dough until smooth and elastic, about 10 minutes.
  • Step 5.

    Place the dough in a greased bowl, covering it with a damp cloth. Allow it to rise in a warm place until doubled in size, about 1-2 hours.
  • Step 6.

    Punch down the dough and divide it into 12 equal pieces. Shape each piece into a bun and place on a baking tray. Cover with a damp cloth and leave to rise for another hour.
  • Step 7.

    For the cross, mix flour and water to create a paste. Pipe crosses onto the buns.
  • Step 8.

    Bake at 220°C (428°F) for 20 minutes or until golden brown. Brush with warm apricot jam for a glossy finish.
  • Step 9.

    Let the buns cool on a wire rack before serving.
