Sesame & Poppy Seed Brioche Loaf Recipe
A delicious and rich brioche loaf with the added crunch of sesame and poppy seeds.

METHOD
Step 1.
In a large bowl, combine the milk, sugar and yeast. Let stand for 5 minutes until frothy.Step 2.
Add flour and salt to the yeast mixture. Mix until well combined.Step 3.
Add the eggs, one at a time, mixing well after each addition.Step 4.
Gradually add the butter, while continuously stirring, until the dough is smooth and elastic.Step 5.
Transfer the dough to a lightly floured surface and knead for about 10 minutes.Step 6.
Place the dough in a greased bowl and cover with a clean tea towel. Let rise in a warm place for 2 hours or until doubled in size.Step 7.
Punch down the dough, then divide it into three equal parts. Roll each part into a long rope.Step 8.
Braid the three ropes together, pinch the ends to seal and tuck them under.Step 9.
Place the knotted dough in a greased loaf pan. Cover and let rise until doubled in size, about 1 hour.Step 10.
Preheat oven to 180C.Step 11.
Brush the loaf with egg wash, then sprinkle with sesame and poppy seeds.Step 12.
Bake for 25-30 minutes, or until golden brown.Step 13.
Remove from the oven and let cool on a wire rack before slicing.

1 tbspActive dry yeast
500 gPlain flour
1 tspSalt
3 Eggs
150 gButter, room temperature
1 Egg, for egg wash
2 tbspSesame seeds
2 tbspPoppy seeds
