Sesame & Poppy Seed Brioche Loaf Recipe

A delicious and rich brioche loaf with the added crunch of sesame and poppy seeds.

METHOD

  • Step 1.

    In a large bowl, combine the milk, sugar and yeast. Let stand for 5 minutes until frothy.
  • Step 2.

    Add flour and salt to the yeast mixture. Mix until well combined.
  • Step 3.

    Add the eggs, one at a time, mixing well after each addition.
  • Step 4.

    Gradually add the butter, while continuously stirring, until the dough is smooth and elastic.
  • Step 5.

    Transfer the dough to a lightly floured surface and knead for about 10 minutes.
  • Step 6.

    Place the dough in a greased bowl and cover with a clean tea towel. Let rise in a warm place for 2 hours or until doubled in size.
  • Step 7.

    Punch down the dough, then divide it into three equal parts. Roll each part into a long rope.
  • Step 8.

    Braid the three ropes together, pinch the ends to seal and tuck them under.
  • Step 9.

    Place the knotted dough in a greased loaf pan. Cover and let rise until doubled in size, about 1 hour.
  • Step 10.

    Preheat oven to 180C.
  • Step 11.

    Brush the loaf with egg wash, then sprinkle with sesame and poppy seeds.
  • Step 12.

    Bake for 25-30 minutes, or until golden brown.
  • Step 13.

    Remove from the oven and let cool on a wire rack before slicing.

  1. 125 mlMilk

  2. 50 gCaster sugar

  3. 1 tbspActive dry yeast

  4. 500 gPlain flour

  5. 1 tspSalt

  6. 3 Eggs

  7. 150 gButter, room temperature

  8. 1 Egg, for egg wash

  9. 2 tbspSesame seeds

  10. 2 tbspPoppy seeds
