METHOD
Step 1.
Thoroughly wash the clementines. Cut them into halves and remove any seeds.Step 2.
Using a food processor, blend the clementines until smooth.Step 3.
In a large pot, combine the blended clementines with sugar and water. Stir well.Step 4.
Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 1.5 to 2 hours, or until the mixture thickens.Step 5.
Test the marmalade's consistency by placing a small amount on a cold plate. If it gels, it's ready.Step 6.
Remove the pot from heat. Stir in the lemon juice.Step 7.
Carefully ladle the marmalade into sterilised jars. Seal the jars while they are still hot.Step 8.
Allow the jars to cool at room temperature. Check seals and then store in a cool, dark place.
