Smooth Clementine Marmalade Recipe

METHOD

  • Step 1.

    Thoroughly wash the clementines. Cut them into halves and remove any seeds.
  • Step 2.

    Using a food processor, blend the clementines until smooth.
  • Step 3.

    In a large pot, combine the blended clementines with sugar and water. Stir well.
  • Step 4.

    Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 1.5 to 2 hours, or until the mixture thickens.
  • Step 5.

    Test the marmalade's consistency by placing a small amount on a cold plate. If it gels, it's ready.
  • Step 6.

    Remove the pot from heat. Stir in the lemon juice.
  • Step 7.

    Carefully ladle the marmalade into sterilised jars. Seal the jars while they are still hot.
  • Step 8.

    Allow the jars to cool at room temperature. Check seals and then store in a cool, dark place.
