Spiced Cinnamon & Apple Quinoa Recipe

METHOD

  • Step 1.

    Rinse the quinoa under cold water.
  • Step 2.

    In a saucepan, bring water and quinoa to a boil, then reduce to a simmer, covering for 15 minutes or until water is absorbed.
  • Step 3.

    While quinoa is cooking, heat a non-stick pan over medium heat and add diced apples, cinnamon, nutmeg, and a splash of water. Cook until apples are soft.
  • Step 4.

    Once quinoa is done, stir through the apple mixture, adding honey and lemon juice to taste.
  • Step 5.

    Serve warm, topped with fresh apple slices and a sprinkle of cinnamon.
  • Step 6.

    Garnish with mint leaves for an extra touch.
