Spiced Cinnamon & Apple Quinoa Recipe

METHOD
Step 1.
Rinse the quinoa under cold water.Step 2.
In a saucepan, bring water and quinoa to a boil, then reduce to a simmer, covering for 15 minutes or until water is absorbed.Step 3.
While quinoa is cooking, heat a non-stick pan over medium heat and add diced apples, cinnamon, nutmeg, and a splash of water. Cook until apples are soft.Step 4.
Once quinoa is done, stir through the apple mixture, adding honey and lemon juice to taste.Step 5.
Serve warm, topped with fresh apple slices and a sprinkle of cinnamon.Step 6.
Garnish with mint leaves for an extra touch.
