METHOD

  • Step 1.

    Begin by combining the heavy cream and sugar in a saucepan over medium heat. Stir until the sugar dissolves completely.
  • Step 2.

    Bring the cream mixture to a boil, then simmer for about 3 minutes. Remove from heat.
  • Step 3.

    Stir in the elderflower cordial and strawberry puree. Mix until well combined.
  • Step 4.

    Pour the mixture into four dessert glasses. Allow to cool slightly before refrigerating for at least 4 hours, or until set.
  • Step 5.

    Just before serving, crumble the biscuit over each posset.
  • Step 6.

    Garnish with fresh blueberries and an edible flower on top.
