METHOD
Step 1.
Begin by combining the heavy cream and sugar in a saucepan over medium heat. Stir until the sugar dissolves completely.Step 2.
Bring the cream mixture to a boil, then simmer for about 3 minutes. Remove from heat.Step 3.
Stir in the elderflower cordial and strawberry puree. Mix until well combined.Step 4.
Pour the mixture into four dessert glasses. Allow to cool slightly before refrigerating for at least 4 hours, or until set.Step 5.
Just before serving, crumble the biscuit over each posset.Step 6.
Garnish with fresh blueberries and an edible flower on top.
