METHOD
Step 1.
Wash and hull the strawberries. Set them aside too dry, then roughly chop them.Step 2.
In a blender, combine the strawberries, half the sugar, and lemon juice until smooth.Step 3.
In a separate bowl, mix the remaining sugar with the cream until dissolved. Mix this into the strawberry purée.Step 4.
Pour the mixture into an ice cream machine. Follow the manufacturer's instructions to churn the ice cream until thickened.Step 5.
Crush shortcake into small pieces and fold into the thickened ice cream mixture.Step 6.
Freeze for at least 3 hours, or until the ice cream is firm.Step 7.
Before serving, take the ice cream out of the freezer for a few minutes to soften a little. Serve with extra strawberries, if you like.
