METHOD

  • Step 1.

    Wash and hull the strawberries. Set them aside too dry, then roughly chop them.
  • Step 2.

    In a blender, combine the strawberries, half the sugar, and lemon juice until smooth.
  • Step 3.

    In a separate bowl, mix the remaining sugar with the cream until dissolved. Mix this into the strawberry purée.
  • Step 4.

    Pour the mixture into an ice cream machine. Follow the manufacturer's instructions to churn the ice cream until thickened.
  • Step 5.

    Crush shortcake into small pieces and fold into the thickened ice cream mixture.
  • Step 6.

    Freeze for at least 3 hours, or until the ice cream is firm.
  • Step 7.

    Before serving, take the ice cream out of the freezer for a few minutes to soften a little. Serve with extra strawberries, if you like.
