METHOD

  • Step 1.

    Begin by preheating your oven to 150°C.
  • Step 2.

    Rub the pork shoulder generously with salt, black pepper, and smoked paprika.
  • Step 3.

    In a roasting tin, place the pork shoulder fat side up. Pour around 250 ml of water into the base of the tin. Cover tightly with foil.
  • Step 4.

    Roast for about 7-8 hours or until the pork is tender enough to pull apart easily with a fork.
  • Step 5.

    For the apple sauce, peel and dice the apples. In a saucepan over medium heat, melt the butter. Add the apples, sugar, and 2 tbsp of water. Cover and cook, stirring occasionally, until the apples are very soft, about 15 minutes.
  • Step 6.

    Use a fork or a potato masher to mash the apples into a smooth sauce. Let it cool.
  • Step 7.

    When the pork is done, remove it from the oven and let it rest for 15 minutes. Pull the meat apart using two forks, discarding any fat.
  • Step 8.

    Slice open the white bread rolls. Layer a generous helping of pulled pork on each roll, topped with a spoonful of apple sauce.
  • Step 9.

    Serve immediately while warm.
