Sweet Cinnamon & Banana Pancakes Recipe

METHOD
Step 1.
In a large bowl, mix together the flour, sugar, baking powder, cinnamon and salt.Step 2.
In another bowl, beat the eggs and then add the milk, melted butter and vanilla extract, stirring to combine.Step 3.
Gradually add the wet ingredients to the dry, stirring gently. Be careful not to overmix.Step 4.
Fold in the mashed bananas.Step 5.
Heat a non-stick pan over medium heat and lightly grease it with butter.Step 6.
Pour 1/4 cup of batter for each pancake onto the pan.Step 7.
Cook until bubbles appear on the surface, then flip and cook until lightly browned on the other side.Step 8.
Serve with a sprinkle of icing sugar and cinnamon then top with the chopped banana and a drizzle of maple syrup.
