Vanilla Gelato with Olive Oil & Sea Salt Recipe

Experience a delightfully smooth vanilla gelato, elevated with a drizzle of olive oil and a sprinkling of sea salt for an unforgettable dessert.





  • Step 1.

    Combine milk, cream, and sugar in a saucepan over medium heat. Stir until sugar dissolves.
  • Step 2.

    Split the vanilla pod lengthwise and scrape out the seeds. Add the seeds and pod to the saucepan.
  • Step 3.

    Heat the mixture until it's just about to simmer, then remove from heat. Allow to infuse for 30 minutes.
  • Step 4.

    In a bowl, lightly whisk the egg yolks. Gradually pour in the milk mixture while continuously whisking.
  • Step 5.

    Transfer the mixture back into the saucepan. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.
  • Step 6.

    Strain the custard into a bowl to remove the vanilla pod and any solids. Let cool to room temperature, then refrigerate until chilled, preferably overnight.
  • Step 7.

    Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.
  • Step 8.

    To serve, drizzle each portion with a teaspoon of olive oil and a pinch of sea salt.
