
Vanilla Gelato with Olive Oil & Sea Salt Recipe

METHOD
- Step 1.Combine milk, cream, and sugar in a saucepan over medium heat. Stir until sugar dissolves.
- Step 2.Split the vanilla pod lengthwise and scrape out the seeds. Add the seeds and pod to the saucepan.
- Step 3.Heat the mixture until it's just about to simmer, then remove from heat. Allow to infuse for 30 minutes.
- Step 4.In a bowl, lightly whisk the egg yolks. Gradually pour in the milk mixture while continuously whisking.
- Step 5.Transfer the mixture back into the saucepan. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.
- Step 6.Strain the custard into a bowl to remove the vanilla pod and any solids. Let cool to room temperature, then refrigerate until chilled, preferably overnight.
- Step 7.Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.
- Step 8.To serve, drizzle each portion with a teaspoon of olive oil and a pinch of sea salt.
