Vanilla Gelato with Olive Oil & Sea Salt Recipe

METHOD
Step 1.
Combine milk, cream, and sugar in a saucepan over medium heat. Stir until sugar dissolves.Step 2.
Split the vanilla pod lengthwise and scrape out the seeds. Add the seeds and pod to the saucepan.Step 3.
Heat the mixture until it's just about to simmer, then remove from heat. Allow to infuse for 30 minutes.Step 4.
In a bowl, lightly whisk the egg yolks. Gradually pour in the milk mixture while continuously whisking.Step 5.
Transfer the mixture back into the saucepan. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.Step 6.
Strain the custard into a bowl to remove the vanilla pod and any solids. Let cool to room temperature, then refrigerate until chilled, preferably overnight.Step 7.
Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.Step 8.
To serve, drizzle each portion with a teaspoon of olive oil and a pinch of sea salt.
