METHOD

  • Step 1.

    Pour the double cream into a pan, add the sugar and vanilla pod, and slowly bring to the boil.
  • Step 2.

    Reduce the heat and simmer for 3 minutes. Remove from the heat and leave to cool for about 15 minutes.
  • Step 3.

    After the mixture has cooled, remove the vanilla pod and stir in the lemon and orange juice.
  • Step 4.

    Pour the mixture into glasses and put them in the fridge for at least 2 hours, or until set.
  • Step 5.

    When ready to serve, top each posset with orange slice and a few pomegranate seeds.
