Vanilla Posset with Orange & Pomegranate Recipe

METHOD
Step 1.
Pour the double cream into a pan, add the sugar and vanilla pod, and slowly bring to the boil.Step 2.
Reduce the heat and simmer for 3 minutes. Remove from the heat and leave to cool for about 15 minutes.Step 3.
After the mixture has cooled, remove the vanilla pod and stir in the lemon and orange juice.Step 4.
Pour the mixture into glasses and put them in the fridge for at least 2 hours, or until set.Step 5.
When ready to serve, top each posset with orange slice and a few pomegranate seeds.
