Veggie Spaghetti Bolognaise Recipe
A vegetarian twist to the classic Bolognaise, using Quorn mince and a variety of vegetables and spices.

METHOD
Step 1.
Heat 1 tbsp of olive oil in a large pan over medium heat.Step 2.
Add the onion, carrot, and garlic to the pan and cook for 5 minutes, or until softened.Step 3.
Add the Quorn mince to the pan and cook for a further 5 minutes, stirring constantly.Step 4.
Pour in 1 can of tomatoes, add the tomato puree, stock, mixed herbs, and sugar. Mix well and bring to a simmer.Step 5.
Cover and cook for 1 hour, stirring occasionally, until the sauce has thickened.Step 6.
Meanwhile, cook the spaghetti according to the packet instructions.Step 7.
Serve the Bolognaise sauce over the cooked spaghetti, garnished with basil leaves and a sprinkle of cheese.

2 Garlic Cloves, crushed

1 can of Chopped Tomatoes
2 tbspTomato Puree
500 mlVegetable Stock
1 tbspMixed Herbs
1 tspSugar
300 gSpaghetti
10 Basil Leaves, for garnish
2 tbspCheese, grated
