Veggie Spaghetti Bolognaise Recipe

A vegetarian twist to the classic Bolognaise, using Quorn mince and a variety of vegetables and spices.

METHOD

  • Step 1.

    Heat 1 tbsp of olive oil in a large pan over medium heat.
  • Step 2.

    Add the onion, carrot, and garlic to the pan and cook for 5 minutes, or until softened.
  • Step 3.

    Add the Quorn mince to the pan and cook for a further 5 minutes, stirring constantly.
  • Step 4.

    Pour in 1 can of tomatoes, add the tomato puree, stock, mixed herbs, and sugar. Mix well and bring to a simmer.
  • Step 5.

    Cover and cook for 1 hour, stirring occasionally, until the sauce has thickened.
  • Step 6.

    Meanwhile, cook the spaghetti according to the packet instructions.
  • Step 7.

    Serve the Bolognaise sauce over the cooked spaghetti, garnished with basil leaves and a sprinkle of cheese.

  1. 1 tbspOlive Oil

  2. 1 Onion, finely chopped

  3. 1 Carrot, finely chopped

  4. 2 Garlic Cloves, crushed

  5. 300 gQuorn Mince

  6. 1 can of Chopped Tomatoes

  7. 2 tbspTomato Puree

  8. 500 mlVegetable Stock

  9. 1 tbspMixed Herbs

  10. 1 tspSugar

  11. 300 gSpaghetti

  12. 10 Basil Leaves, for garnish

  13. 2 tbspCheese, grated
