METHOD
Step 1.
Preheat the oven to 180°C (350°F, Gas Mark 4) and line two baking trays with parchment paper.Step 2.
In a large bowl, cream together the butter and sugars until light and fluffy.Step 3.
Beat in the egg and vanilla extract until well combined.Step 4.
Sift in the flour and baking soda, mixing until just incorporated.Step 5.
Fold in the white chocolate chips and dried cranberries until evenly distributed throughout the dough.Step 6.
Drop heaped tablespoons of the cookie dough onto the prepared baking trays, leaving space between each for them to spread out.Step 7.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centres are set.Step 8.
Allow to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
